Get Your Game On at The Highway

Game season is upon us and to accommodate The Highway Hotel, Plympton, have provided us with a set of wild new additions to their menu.

The popular hotel is celebrating its fifth game season with an interesting new spread created from produce sourced by head chef Elliot Hampton from Something Wild and My Butcher.

Taking pride in this part of his job, Hampton says he enjoys the challenge of brainstorming a new meat selection for game season each year.

“Seeing people try something that is certainly not usually seen on a traditional Pub menu gives us great delight!”

“People from all parts of the State join us each year just for Game Season,” he says.

“There are plenty of food lovers who enjoy the opportunity to try some delicacies that are certainly on the wild side.”

In that case, if you’re feeling adventurous in the coming weeks or keen to show your friends how many different kinds of meats you can consume in the one night, keep this menu in mind.

Entrées let you dive straight into the weird and wonderful world of meats via the richness and spiciness of the Kangaroo Tartare with puffed rice, wasabi crème and radish on an organic buckwheat cracker as well as the Goat Sweetbreads (usually made with the thymus organ of an animal but this is pleasantly disguised through the crumbed base) complemented by parsnip, dill pollen, pistachio and foie gras jus.

You’ll then have an option of three unusual mains to choose from including the Wild Rabbit Ragu with pappardelle pasta ribbons, preserved lemon, queen green olive and fresh peas, the smokey and salted Prosciutto Wrapped Wild Boar presented with carrot, swede quenelle, pickled fennel and spiced mead glaze adding moisture, and the Alpaca (yes, actual alpaca) Sliders in a brioche bun, grilled speck, provolone cheese, pickled turnip and fries.

To finish off your night, we’d recommend ordering the accompanying, fresh dessert; Foie Gras Parfait with freeze dried mandarin, plum gel and toffee.

Game Season starts May 16th and will end on the 30th in the Highway’s bistro and lounge bar. Prepare to get your game on.
