This year, Ferrogen has partnered with health initiative No Meat May to challenge people around the world to eliminate meat from their diet for 31 days. Not only does this offer great health benefits, but eating meat-free for a month also helps ease some of the environmental burden on our planet.
Ferrogen is an iron supplement you can easily find at most pharmacies and is popular amongst those with not just iron deficiencies, but also people eating plant-based who may be struggling to get enough iron in. To showcase how easy, simple and delicious meat-free eating can be, Ferrogen teamed up with nutritionist Pheobe Conway to create some yummy, iron-rich recipes.
As 38% of Australian women aged 19-50 suffer from some kind of iron deficiency, and eating more iron can boost energy levels and help your hair grow stronger and healthier, we were keen to get on board and try some recipes. Ferrogen were kind enough to send us a box of tasty, veggie goodies to cook with, so here’s the recipe for our fave dish, black bean tacos.
Ferrogen’s Black Bean Tacos
These tacos are so delicious, you honestly won’t even miss the meat! The main filling is black beans which are a great source of iron, plus all the spices give these tacos a rich and comforting flavour.
Ingredients
- 6 taco wraps
- 1 brown onion, diced
- 4 garlic cloves, crushed
- 2 tbsp olive oil
- 400g tin black beans
- 1/4 cup vegetable stock
- 400g tinned tomatoes
- 1 tbsp smoked paprika
- 1 tsp cumin
- 1/2 tsp chilli flakes
- 1 tsp dried oregano
- 1/2 tbsp brown sugar
Method
Heat the olive oil in a pan over medium-high heat and cook the onion and garlic until translucent
Add in the remaining ingredients and cook for 10-15 mins, stirring often until thickened
Heat taco wraps for a few seconds in the microwave
Fill the taco wraps with the bean mixture and any of your fave toppings. We love guacamole, sour cream, fresh coriander, shredded cabbage and cheese!
